Ingredients:
2 x Chicken breast (£4)
4 x Ready to cook Noodles (1.70)
1.5 litres Chicken stock (10p)
2 x tablespoons Soy Sauce
4 x Mushrooms (30p)
4 x Spring Onion (50p)
1 x Red pepper (39p)
2 x Pak choi (£1.35)
Coriander and Lime to serve (optional) (76p)

You can vary ingredients to suit what your family likes and also use up wht you have in the fridge!
Method
Prep
Chop the Mushroom, red pepper, pak choi, coriander, spring onion, coriander and lime (optional -use if you have one). Make up a stock we used 1.5 litres with 2 chicken stock cubes. Butterfly the chicken breast.
STEP 1
Set a large saucepan over a medium heat and pour in the stock - Add in coriander stalks (or coriander powder will do) along with half the chilli. Once boiled, reduce the heat and simmer for 5-10 mins to infuse the flavours.
STEP 2
Pop the Mushroom, red pepper, pak choi and chicken onto the grill or BBQ until cooked. You can also stiry fry these if you don’t wish to BBQ. STEP 3
Add the noodles into the stock to simmer for 2/3 minutes.
STEP 4
Serve in deep bowls topped with coriander leaves and the remaining chilli and drizzle with soy sauce to taste and enjoy!
HINT: For a creamier version of the ramen, you can add Thai curry paste and a tin of coconut milk to the chicken stock before adding the noodles. This will add richness and a hint of Thai flavor to the dish.
