Slow Cooker Pulled Pork - This tender, flavourful pulled pork is perfect for baps, tacos, or as a main dish. The slow cooker does all the hard work, giving you fall-apart delicious pork with minimal effort!
Ingredients
- 2 kg pork shoulder
- 1 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, crushed
- 250 ml BBQ sauce (plus extra for serving)
- 120 ml apple cider vinegar
- 50 g brown sugar
- 1 tbsp paprika
- 1 tsp smoked paprika (optional)
- 1 tsp cumin
- 1 tsp chilli powder
- 1 tsp mustard powder
- Salt and pepper, to taste
- 120 ml chicken stock or water
Instructions:
1. Prepare the pork: Rub the 2 kg pork shoulder with olive oil, then season generously with salt, pepper, paprika, smoked paprika (if using), cumin, chili powder, and mustard powder.
2. Sear the pork (optional): Heat a large pan over medium-high heat. Sear the pork on all sides for 2-3 minutes per side until browned. This adds flavour but is optional.
3. Assemble in the slow cooker: Place the chopped onion and garlic in the bottom of your slow cooker. Place the pork on top. Pour in the BBQ sauce, apple cider vinegar, brown sugar, and chicken stock.
4. Cook: Cover and cook on low for 8-10 hours or high for 4-6 hours, until the pork is tender and easily pulls apart.
5. Shred the pork: Remove the pork from the slow cooker and use two forks to shred it into pieces. Discard any excess fat. Return the shredded pork to the slow cooker and stir it into the sauce.
6. Serve: Serve on buns, in tacos, or however you like, with extra BBQ sauce.
