This week for 'love lamb week' we've put together a recipe idea inspired by the amazing riblets we featured on our social media by @Makeitorjakeit from Mesen Cardiff, earlier in the week.
This delicious recipe for honey and onion glazed lamb chops creates a perfect balance of savoury, sweet, and caramelised flavours. The honey glaze adds a rich sweetness, while the onions provide a delicious caramelised base for the lamb chops.
Honey and Onion Glazed Lamb Chops
Ingredients (Serves 4):
- 8 lamb chops
- 2 medium onions, thinly sliced
- 3 tablespoons olive oil (divided)
- 3 tablespoons honey
- 2 tablespoons balsamic vinegar (or red wine vinegar)
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary (or ½ teaspoon dried)
- Salt and black pepper, to taste
Instructions:
1. Prepare the Lamb Chops:
- Pat the lamb chops dry and season generously with salt and pepper on both sides.
- In a small bowl, mix 1 tablespoon of olive oil with minced garlic and rosemary. Rub this mixture over the lamb chops and set aside.
2. Cook the Onions:
- Heat the remaining 2 tablespoons of olive oil in a large pan over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-12 minutes until they soften and start to caramelize.
- Once the onions are golden brown, add honey and balsamic vinegar to the pan. Stir and cook for another 3-4 minutes until the onions are well coated and slightly sticky.
- Remove the onions from the pan and set aside.
3. Cook the Lamb Chops:
- In the same pan, increase the heat to medium-high and add the lamb chops. Cook for 3-4 minutes per side for medium-rare, or adjust cooking time for your preferred doneness.
4. Glaze the Lamb Chops:
- After cooking, reduce the heat to low. Add the caramelized onions back to the pan with the lamb chops.
- Spoon some of the honey and onion mixture over the lamb chops to glaze them while they warm through, about 2 minutes.
5. Serve:
- Remove the lamb chops and glazed onions from the pan. Serve the chops with a generous amount of the caramelized onion and honey glaze on top.
Serving Suggestions:
- Mashed Potatoes: The sweet honey and onion glaze pairs perfectly with creamy mashed potatoes.
- Green Beans: Lightly sautéed or steamed green beans make a great fresh side dish.
- Crusty Bread: Use it to soak up the delicious honey-onion sauce!
