There’s nothing quite like pork belly strips when you’re after something indulgent, full of flavour, and just a little bit naughty. Whether you roast them until the fat turns perfectly crispy, glaze them in a sticky soy sauce, or throw them on the BBQ, pork belly strips are a proper crowd-pleaser. They’re affordable, easy to cook, and can be transformed into everything from pub-style comfort food to restaurant-worthy dishes with just a few store-cupboard ingredients.

1. Crispy Roast Pork Belly Strips
Simple pub-style roast version
You’ll need:
Pork belly strips
Olive oil or rapeseed oil
Salt & black pepper
Garlic granules or crushed garlic
A drizzle of honey (optional)
How to make it:
Preheat the oven to 200°C (fan 180°C).
Place the strips on a tray, drizzle with oil, and season well.
Roast for 35–45 minutes, turning halfway through, until golden and crisp.
Optional: brush with honey for the last 5 mins for a sweet glaze.
Serve with: roast potatoes, veg, and gravy — or chips and coleslaw for something simpler.
2. Sticky Soy & Honey Pork Belly
Asian-inspired, sticky and sweet
You’ll need:
Pork belly strips
3 tbsp soy sauce
2 tbsp honey
1 tbsp brown sugar
2 cloves garlic (crushed)
1 tsp grated ginger
1 tbsp rice vinegar or cider vinegar
How to make it:
Fry the strips in a pan until browned on both sides.
Mix all sauce ingredients in a bowl.
Pour over the pork, reduce heat, and simmer for 10–15 mins until sticky.
Garnish with spring onions and sesame seeds.
Serve with: rice, noodles, or steamed greens.
3. Spicy Chilli & Garlic Pork Belly
Quick and fiery
You’ll need:
Pork belly strips
2 cloves garlic (chopped)
1–2 tsp chilli flakes or fresh red chilli
1 tbsp soy sauce
Juice of half a lime
A drizzle of honey or sugar (optional)
How to make it:
Fry pork belly in a hot pan until crisp.
Add garlic and chilli — cook 1 minute until fragrant.
Add soy sauce, lime juice, and a touch of honey.
Toss to coat and serve immediately.
Serve with: rice or inside a wrap with salad and yoghurt.
4. Korean-Style Lettuce Wraps (Samgyeopsal)
Fun and great for sharing
You’ll need:
Pork belly strips
Lettuce leaves (e.g., romaine or iceberg)
Cooked rice
Kimchi (optional, or use pickled veg)
Ssamjang or a mix of gochujang + mayo
How to make it:
Pan-fry or grill the pork until nicely browned.
Slice into bite-sized pieces.
Wrap in lettuce with rice, sauce, and kimchi.
Serve with: a cold beer or Korean side dishes if you fancy.

Perfect for the grill or oven
You’ll need:
Pork belly strips
BBQ sauce (shop-bought or homemade)
Paprika, salt, pepper, and garlic powder
How to make it:
Rub strips with the spices.
Roast or BBQ for 30–40 mins until browned and nearly cooked through.
Brush with BBQ sauce and cook for another 5–10 mins until caramelised.
Serve with: corn on the cob, chips, and coleslaw.
